Lamb Mini Roast with Warm Spices

A great all in one mid week roasting joint for two to three people that takes only 35-40 minutes to cook. Mini lamb roasting joint brushed with a warm spice mix made from cumin, turmeric and coriander. Roasted with new potatoes and onions.

Ingredients

  • 1 Nicholson’s Lamb Mini Roast (ask your butcher to make some small scores over the meat)
  • 450g New Potatoes
  • 2 Medium Onions cut into 1/4
  • 3 Bay Leaves torn apart
Spice Mix
  • 1 tsp Cumin Powder
  • 1 tsp Turmeric
  • 2 tsp Ground Coriander
  • Salt and Pepper
  • Juice of 1 Orange

Method

  • Preheat oven to Gas Mark 5, 180⁰C
  • Place potatoes, bay leaves and onions in the base of the roasting tin and drizzle with half the oil
  • Mix all the spices in a bowl with remaining oil and brush spice mix all over lamb joint, place in roasting tin on top of the onions and potatoes and roast for 35-40 minutes (cover with foil if browning too quickly)
  • Serve with seasonal vegetables
